It was hard on my kid when she was diagnosed with celiac. The no decent pizza was hard. She was not the biggest Indian food fan but the naan was the best part.
If you are in this situation here are some easy recipes that turn out fairly true to form. https://www.mygfguide.com/gluten-free-pizza-recipe/ Easy and straightforward recipe. I use a stone. https://theglutenfreeaustrian.com/gluten-free-no-knead-focaccia/ You can also make a pizza out of this by adding cheese and whatever to the top. Not a lot because you wanted to rise. https://elavegan.com/gluten-free-pita-bread/ This last one can be a good naan substitute. Make the bread on the thick side and it comes out like naan. For pita roll it thin(1/8-1/4 inch) and put on a hot stone or pan. The stone or pan needs to be about 500-550 which is different from oven temperature. You will have to experiment in your kitchen. These freeze very well. So easy quick sandwiches. If you have any gluten free recipes please share. I do have good recipes for ginger snap cookies, chocolate chip cookies, raspberry bar, brownies, pie crust, Mac and cheese, cakes, etc. Let me know if there is interest. “Good” means people have no clue they are eating gluten free stuff. |
