| I have chicken thighs but not a lot of time or ingredients. What can I make tonight that’s super easy and doesn’t require a lot of ingredients? I have things like onions, garlic, carrots, tomatoes, beans, rice, etc., plus lots of spices. Need my preschooler to like it! |

Do they have skin? My mom used to just put olive oil and a shit ton of salt and pepper on thighs with skin and then roast so they got nice and crispy. Nice easy weeknight meal, paired with a side and veg.
Just do boxed mac and cheese and whatever veg your kiddo likes. |

You could cook them and shred them, then do a rice and beans bowl with the veggies.
I know all kids are different, but my kid loves beans. |
| Equal parts: Dijon, soy sauce and honey or brown sugar. Place chicken thighs on a foil lined baking sheet and baste with the mixture above every 15 minutes. Bake boneless thighs at 400 degrees for 45 minutes. Bone in will take an additional 15 minutes. |
