How long is aged Gouda good for?

Bought it from Whole Foods. Was cut and wrapped by them 12/6 and says sell by 12/26. How long after this date can I eat it?

Yes, it will be obvious, and yes, absent obvious mold growth, bad smell, off flavor, discoloration, etc., I would still eat it.

My husband is Dutch and has brought back aged cheese from Holland many times and keeps it for months. We have some in our fridge right now from August. Nothing is wrong with it.

I think the one from Holland uses different processes.
Don’t they keep it at room temperature outside?

Expiration dates are all kinda like this. most foods are fine past their exp. date, if properly stored. Canned foods especially can go years past their "best by" date. It's mostly nonsense, the idea that a food is fine on 12/26, but "bad" on 12/27. They're okayish guidelines for about how long things will keep peak flavor, but not necessarily indicators of whether or not the food is still safe to consume.

Yes they do not always refrigerate it in the stores but the aged ones we have right now is a Dutch cheese maker that works in the US.
