| I an a WOHM with an 18 month old and need some meals that are ready to eat when we get home from work! Please share your suggestions. |
| This would not be good for an 18 month old but I have one of DH's favorites in right now. I brown pork chops, cook them on low with enough water to cover bottom of the pan and then drain most of the liquid out and add BBQ sauce for about 1/2 hour or so. I prefer a turkey breast in the crockpot with a can of whole cranberries and envelope of dry onoin soup mix but do have to say the BBQ is good. Ribs are very good this way also. |
| Sweet potatoes, black beans, salsa, perhaps chicken. Chicken, mixed frozen veggies for chicken stew then make drop biscuits. My 13 month loves potroast. I do carrots, chicken and potatoes too. |

| You can put chicken breasts in with a jar of bbq sauce, cook on low 8 - 10 hours. It doesn't taste boiled! I remove it, pull it apart with two forks, and use in chicken enchiladas. I think it's delicious. |
I wouldn't use it for enchiladas because it's, well, barbecue. But it is very good on sandwiches. I don't take it out of the crock - just shred it right in the crock with the sauce and leave it on warm for a bit, then make the sandwiches. You can also make chili in a crock pot. 6:55, if everything you make in the crock pot tastes boiled, you need to find some new recipes! |
| Brown the meat before your cook it. The carmelization will create a nice braise (think short ribs) rather than a boiled dinner. |
PP here -- I'm feeling really stupid. Of course, when I do the enchiladas I do it with salsa -- when I make pulled bq sandwiches I use the bbq sauce. You must have thought I was nuts!

Some recipes - yes - yes, bland boiled meat. But, if you do it right -with the right recipe - it tastes like braised meat. And if you don't like braised meat, then clearly a crockpot is not for you. |

my five year old loves corned beef in the crock pot. Pot roast, bbq pulled chicken have also gone over really well with both DC and DH. These are all fairly mild items that are easy to chew (little kids don't have strong chewing skills, hence their preference for nuggets and meatballs).
I've found some good recipes here: http://crockpot365.blogspot.com/ She has young kids and always shares their thoughts on how the recipes turned out. She is also budget-conscious, which is always nice. |

I have something in the crock pot right now! 1 package red kidney beans in water, about 3 inches from the top of the crock pot 3 cubes Magi (chicken bullion cubes in the Spanish section of the supermarket) 1 stalk of leeks (separated, cut off the ends and 3-4 inches of the tops) 1 stalk cilantro 1 bar of butter Cook on low for 6 hours. When you get home, get rid of the leeks and about half the cilantro. Ladel out the bean/water/cilantro mixture into a blender, and blend to make a bean sauce (fill the blender, but make sure in the blender are about 3 full ladels of beans, so the sauce will be thick). You can use more of the beans to make more sauce if you like. When you have enough sauce, drain the rest of the crock pot beans, pick out any remaining cilantro and leeks, and serve the beans with the sauce over rice. |

Slow-Cooked Hoisin Pork Wraps with Peanut Slaw Hoisin and Ginger Shredded Pork 6 pounds pork butt, trimmed of thick fat Salt and pepper 6 cloves garlic, smashed 1 large piece fresh ginger, about five inches long 1 bottle hoisin sauce (12-15 ounces) -- I don't make my own, but you could if you want to. Rub the trimmed pork shoulder all over with salt and fresh cracked black pepper. Put in the slow cooker (cut in pieces first, if necessary). Add the smashed garlic cloves, tucking them around the pork. Peel and grate the ginger and put it in too. Pour the hoisin sauce over everything. Cover and cook on low for about 10 hours or overnight. When finished and tender, use two large forks to shred the meat and mix it with the sauce. |
