When would you buy this roast?

| I’m making a roast (chuck roast) on Christmas. I plan to do my weekly grocery trip on Monday the 22nd. I want to avoid freezing the roast, but I also have plans to bake all day on the 23rd, and we host on the 24th. If I buy it on Monday, keep it in the coldest part of my fridge, will it start to turn by Thursday morning? Should I run out late on the 23rd instead? Instacart isn’t an option because I need one that’s just the right size. |

| I buy the Chuck roast at Wegmans. It comes in a sealed pack and is usually good for at least a week in the fridge. |

| I think it will be fine. It's also a great time to salt it ahead of time. Seasons the meat and helps dry out the surface to get a nice sear. |
