What happened to our potatoes?

We usually boil a few extra potatoes and refrigerate them to make breakfast potatoes the next day. We overslept this morning and didn’t have breakfast. I made Spanish omelette from the potatoes. They were rock hard although the potatoes we had for yesterday’s lunch were soft.
