I want to make them early. Can't freeze them - don't have room in the freezer. I can store them in the basement, though, which is fairly cool.
Will they be 100% fine if I make them Saturday for Thursday evening consumption? |

| Yes you can. The the day before, set your oven on 300°, turn it off, and place your shortbread on a cooling rack in the oven overnight (or for about 4 hours), they'll be fresh again in the morning. |
| Shortbread cookies? Like the traditional Scottish ones I'm thinking of? They stay good for quite a while. They are so dry to begin with. Surely a week is fine, or a couple weeks in an airtight container in the fridge. |

I would think they'd be fine. Shortbread cookies usually keep for 4-5 days in my house and would probable go another couple days but they are gone by then
Btw I sometimes do shortbread cookies with rosemary and bits of dark chocolate in it and they are soooooo good. It's a popular holiday treat in our house. |
