| You can't make turkey gravy ahead because you need the pan drippings from the roasted turkey to make it. It has to be made after pulling the finished turkey out of the oven. You can make the stuffing and side dishes ahead, but not the gravy. |
| I make the gravy base ahead of time, then finish it with the turkey drippings once the turkey comes out of the oven. I use Ina Garten’s recipe; it’s in her “Make it Ahead” cookbook, but you could probably find it online as well. It’s turned out great every time. |
