I’m no longer falling for these cooking betrayals

“Pantry pasta” recipes—mostly underwhelming and even NYT Cooking is constantly pumping these out now. Pantry pastas are what sheet pan dinners were 5 years ago.

Any recipe that contains cottage cheese.

Ground turkey.

What are yours?

I don’t consider it any kind of betrayal, but I’ll be happy if I never see another Instagram reel that begins with someone smashing a banana with a fork.

Ground turkey should be illegal.

I love ground turkey.

+1 Though I like a whole turkey and adore cottage cheese.

Once a year i fall for one of those recipes where the dry pasta or rice is supposed to magically cook itself. Nope! Never works.

Why do all recipes seriously underestimate the time it takes to sautee onions??

Double rise baking. Total waste of time! Single rise in the sheet/pan is perfect.

I don't have NYT or TikTok or follow any food trends at all but ground turkey and cottage cheese are heavily in my rotation because they are so flexible.

I never got onto sheet pan dinners because I tend to do all my veg prep and roasting at once and then grab what I need all week already roasted. IDK it just felt like a faff to me rather than "easy". I don't like having the oven off and on. I grew up in a frugal place where you planned for the oven to be on, did all your roasting and then made some biscuits and cookies at the end.

What’s wrong with ground turkey? It’s a passable healthier substitute for ground pork and sometimes ground beef.

I get ground dark meat, and make tasty breakfast sausages and taco meat.

A fave: https://m.youtube.com/watch?v=XWyog2HcBvk

The inclusion of cloves, nutmeg and allspice was key.

It can be dry so you need to add some fat like olive oil.

It has an odd smell and taste. I’ve bought it from every brand and store around here, conventional and free-range. It all has the same weird taste.

Ground chicken is a much more neutral flavor that just picks up whatever you season it with.

How can a “pantry pasta” go wrong? You just throw in some extra parm and lemon if it is bland.

Agree on ground turkey. It’s gross. I’d rather do beans or tofu if I feel like avoiding ground beef.

Agree on sheet pans - too greasy.

I stopped using ground turkey for the same reason. Now all I taste is blood or, a strong iron taste. The turkey is fully cooked but the after taste is off putting.

THANK YOU!

Or instruct you to sautee the garlic with the onions for the same amount of time. That ends up burning the garlic.
