To adopt a mini boy pup vs girl for 6 yr dog companion

We have a 6 1/2 old sheepadoodle male. He has medium, kind temperament, he use to be very playful now he is starting to calm down more. He’s a standard 60 lb dog.

We would like to adopt a micro pr mini sheepadoodle girl or boy, calm temperament. I am looking for a girl dog but if the boy pup/dog has a mild temperament, does it matter if it’s a boy? Size wise and male dominant wise?

You cannot guarantee temperament with puppies. We bought a "calm and quiet" puppy who we were told would get to 30lb full grown. He got to 65lbs full grown and was completely neurotic.
