Salmon salad. Can increase for a larger serving. This is single serve and I often have it for lunch with leftover salmon. 1T olive oil 1T light mayo Dijon mustard to taste Salt and pepper Combine together. Add in chopped celery and carrots. Combine in flaked up salmon. Mix together. Sometimes I add it to greens sometimes I just eat as is. |

Grape tomatoes - halved or whole, as you like Diced orange bell pepper Sliced hearts of palm Sliced Kalamata olives (regular black olives are fine, too) Roasted almonds (chop roughly if you like) Crumbled feta cheese Balsamic vinaigrette, homemade or storebought, as you like Just throw everything together, and it makes a delicious, easy salad. With a little chicken added, it’s a great summer dinner. |
