I'm trying to learn 5 new salads to add to my mix.

Romain hearts

6 anchovy fillets packed in oil, drained
2 large raw egg yolks
1 Garlic clove
2 Tbsp. fresh lemon juice
¾ tsp. Dijon mustard
2 Tbsp. extra-virgin olive oil
3 Tbsp. grated Parmesan
Dash Worcestershire
Sea salt / Fresh ground black pepper
1" pieces crusted country bread

Red bell pepper
French fried onion rings
Sunflower seeds
Quinoa
Strawberries/peach/nectarine

I'm not a salad dressing person.

Salad nicoise is always a hit. I serve it deconstructed and everyone makes it up their way.

Caprese salad is a no-brainer right now with all the fresh ripe tomatoes and basil coming in from the garden.

break/cut cauliflower into tiny florets
Cubed avocado
Lemon juice
Olive oil
Salt and pepper
Top w chopped almonds if you want

It’s delicious.

Salmon salad.
Can increase for a larger serving. This is single serve and I often have it for lunch with leftover salmon.
1T olive oil
1T light mayo
Dijon mustard to taste
Salt and pepper

Combine together. Add in chopped celery and carrots. Combine in flaked up salmon. Mix together. Sometimes I add it to greens sometimes I just eat as is.

Spring mix greens
Grape tomatoes - halved or whole, as you like
Diced orange bell pepper
Sliced hearts of palm
Sliced Kalamata olives (regular black olives are fine, too)
Roasted almonds (chop roughly if you like)
Crumbled feta cheese
Balsamic vinaigrette, homemade or storebought, as you like

Just throw everything together, and it makes a delicious, easy salad. With a little chicken added, it’s a great summer dinner.
