We just did a very similar trip and I’ll tell you it was a ton of moving around in 10 days And not all that relaxing. We stayed on the Amalfi coast and it was jam packed with tourists. Absolutely beautiful and we loved it but next time we would probably go to Portofino instead. Pompeii should be a quick pass through. Make sure you book hotels with pools for the kids. It was in the high 90s in June for our trip and it was nice to have the option to head back for some Pool relaxation after a long day of sightseeing. We made the mistake of not having a pool in Rome, but did it all of our other stops. Definitely do a cooking class somewhere like in Florence or Rome. If you do go to the Almafi Coast, I recommend Sorrento over the more busier areas like Positano or Capri.

Wouldn't go in summer if your goals are Rome and Pompeii. Too much heat.

If you want to go to Italy in the summer, concentrate on beaches (preferably north) and mountains.

We went to Florence for 4 days last June with 3 young adults 20, 19, 18. I would suggest booking tickets to the museums far in advance. The non ticket lines were very long. The city is very walkable with lots to do and places to eat. We loved the live music in the squares in the evenings and trying to find some of the wine windows throughout the city. Someone on here suggested this tour group https://www.ciaoflorence.it/en and we took the full day tour to Sienna, San Gimignano, lunch with wine tasting, and Pisa tour. It was an amazing relaxed day. HTH.

Mountains are easy- just go north and you hit them eventually.

Beaches- not sure about Adriatic side, but there are plenty of great beach towns between Pisa and Genoa and then also west of Genoa.
