My mother-in-law likes this game She downloaded where you complete pictures with certain colors kind of like paint by the number, but on the iPad. I think it looks boring as hell, but she really enjoys it.

75 is quite young. Is she disable or something?

Though in their 80s, my aunts like to play Wordle and connect with their nieces and nephews by sharing daily scores. They also play Words with Friends with each other and family members of all generations, which keeps a small sense of regular connection too. It has a chat feature in game.

One can be bored at any age.

Needs something addicting to distract her from feeling lonely for the 4-8 hours a day she is alone and not socializing or seeing doctors and all that.

Wordle tier isn't enough.

Why not try to connect her to a senior day program? Or to a Y or other fitness place with classes sit seniors? Or to the local library which may offer various book club groups?
If she does not drive do research on transportation options to get her there.

My mom does a lot of sudoku and crossword puzzles on her iPad.

Sudoku or killer sudoku are good. Solitaire, Pinochle, you can do puzzles with apps as well.

My MIL does crosswords on her iPad regularly.
