It’s been a decade, but I stayed at the Best Western Plus Hood River Inn and had a room with a balcony and a beautiful view of the river. It’s kind of isolated though, so you’d have to drive to get to restaurants and shops.

We were at the Best Western in Hood River in 2018 and it was surprisingly nice. It was probably the best option in Hood River then. We did drive to dinner in the city of Hood River, but it was not terribly far.

I'm not sure if the OP wants to hike at Mount Hood or just see it for a day. If the latter, then stay in Hood River area.

The drive we took from Bend to Hood River is one that I will always remember as feeling like "Where in the hell are we?" It was like the wild west, totally middle of nowhere.

I had a very good experience with Wet Planet for rafting. They're a short drive away, on the Washington side of the Columbia River.

My kids love fishing and kayaking on Lost Lake. It’s a little camp site on a lake with a small boat house where they rent rowboats and kayaks. There are beautiful views of the volcanos and it’s a great way to spend an afternoon.

Also, if they ski or snowboard, Timberline is still open.

We had a great experience white water rafting with Zoller's. We were staying at Skamania Lodge. Highly recommend both.
