Engagement on vacation (champagne/apps)?

Just learned DD’s bf will make a surprise visit to our beach house next week to propose. (Assume this is an awesome idea that is totally DD). My question is what champagne, food, apps should I have for this pop up event?
DH is driving so I can put some stuff in his car. At a minimum, what champagne should I buy? (we don’t drink) — something very good but short of Dom Perignon. With extended family and longtime neighbors, we could get to 40 adults.

Veuve Cliquot is safe choice. Laurent-Perrier and Piper-Heidsieck should be available at the same price.

Champagne is acidic. For food & apps think rich - Cheese, seafood, roasted chicken.

I am superstitious enough that I might just stash one bottle of champagne then have a plan to go out if celebration is in order.

This is such a weird post. The boyfriend is doing a surprise engagement but 40 of the parents’ “beach house neighbors” need to be there to celebrate? Creepy. Let this couple celebrate on their own and don’t make it impossible for the woman to decline to proposal.
