I don't know if you SHOULD make it dinner from a health perspective but it is certainly delicious enough that you could - the Southern Living Jalapeno Popper Dip - and I don't even like jalapeno poppers!

| Crab dip or artichoke dip. Mix sour cream, mayo, and Parmesan (equal parts) with whatever your filling of choice is. A little sautéed shallot and spinach mixed in is nice. Season and add a little cayenne and nutmeg. More cheese on top. Bake in a low oven for 20 min |

Crab dip:
1 can lump crabmeat 1 brick cream cheese 1 cup mayo 8oz cheddar Old Bay, Cayenne, Garlic powder Combine and bake Hot 7 layer dip: In order: 8oz cream cheese mixed with canned green chiles 1 pureed can chipotles in adobo Pepper Jack cheese Refried Beans 1 can Rotel Cheddar Cheese Sliced jalapenos Layer and bake Kitfo queso dip: Brown ground beef or minute steak with onions and Jalapenos, season with berbere. Add to melted American cheese (or even better sodium citrate cheddar) along with chopped tomatoes and chopped collard greens. I like to deep fry injera triangles for dipping, they retain their sourness and have a really hearty crunch. |
