Suggestions for an anniversary trip in April for a week

Any suggestions for 20th anniversary trip in Europe in late April? Thinking semi luxury (not over the top), but a cut above Marriott and Hilton. Would like to be near nature, lakes, perhaps drive or take the train to a larger city. Would love to sightsee a bit, access to good restaurants. We are late 40's. Off beat destinations are preferred. We have travelled quite a bit, but always with kids. This will be our first trip alone, since we had kids!

Some of the places we have visited in Europe are Paris, London, Switzerland, Croatia, Slovenia, Italy (Rome, Florence, Venice), Austria, Spain. One of the places I was thinking was Lake Como (not offbeat of course), anything else that we should consider at that time of the year? Don't like cold weather.

How many days do you have? Lake Como is fantastic but probably will still be pretty cold. Maybe Portugal?

Provence, stay at a luxury BnB near Avignon or Aix-en-Provence. It will be warm but not hot. Rent a car and drive to the beautiful villages in the mountains/hills, wineries, maybe see Roman ruins in Nines. Can fly one stop to Marseille Airport.

Thanks, we will have 7-9 days. So not very long. Not very keen on Portugal, as we plan to go with kids in the next 2-3 years. Provence sounds great.
