I have a guest coming who has a gluten intolerance AND is vegetarian...I"m sort of at a loss. Anyone have any good recipes or can recommend a website?
Thanks! |
| Baked penne with gluten free penne noodles and salad. It's often not hard to make things gluten free once you know what you'd like to make. |

Stir fry w/ tofu and veggies over rice. You can use tamari (wheat free soy sauce) in place of soy sauce for a marinade or sauce
Veggie and tofu kababs on the grill, you could make chicken or steak ones as well for people who are meat eaters |

Mushroom risotto, cheese plate with fruit and gluten free crackers, ice cream sundaes for dessert.
For websites, check out Karina's Kitchen or Gluten Free Goddess. |

Go to Whole Foods, they have a huge Gluten Free section.
In general, anything with rice will work, Indian/Thai cuisine is mostly vegetarian. Rachel Ray had a recipe this morning with 3 roasted veggies (garlic, eggplant, and red peppers), pureed then combined with a can of fire roasted tomatoes. That was tossed with cooked pasta (as a PP said, you can get GF pasta). |
| Black bean soup w/ corn tortillas, or all-corn/gluten free corn bread, or over rice. |
| Eggplant roll-ups, a Mexican bar with corn tortillas and black or refried beans, vegetable risotto, quinoa salad, ratatoulle, veggie jambalaya, rice and vegetable soup with a big green salad, a frittata, or a vegetable stir fry. |
| seared polenta squares with caramelized onions, goat cheese, and a drizzle of honey |
| Cook Spanish. Paella with vegetables. Maybe figs stuffed with cheese (cabrales or other blue would be great). Could also do sauteed mushrooms, a salad, and tortilla espanola if you want a tapas theme. |
