Knives

What is your favorite brand of knives? My best Wusthof handle is cracked. It’s 20 years old probably time to let go. I really only need to replace the chef’s knife, and maybe a santoku.

I’ve been swapping out my wustof’s with dahlstrams.

I think pp might mean Dalstrong? They're having a sale if you're interested.

I like Wusthof.

I love the cheap Swiss army chef’s knife. I think it was from a wirecutter link and it’ll probably pop right up on Amazon. The handle is plastic though. I’m not a knife snob and it’s great for me.

Shuns are my all time favorite.

Go to Sur la Table and try them out and talk to someone. Knives are very personal and the best chef's knife (or whatever) will suck if it isn't a good fit, weight and balance for you.

I don't think I have a preference. I just try to keep what I am using sharp. I don't spend hours using a knife.

Not so much "brand" but the steel and origin.

Japanese steel and German steel are both good, especially older ones (Pre-1960s for German, Pre-1990s for Japanese.)

Henckels ProS. Been using the same set for 25 years.

German steel if you’re rough on your knives otherwise Japanese steel. Get a Victorinox and some sharpening stones and learn how to maintain a blade.

We have both German chef's knives (Henckels fwiw) and Japanese petty knives (various) as well as cheap stamped paring knives. We mostly use the petty knives but the German knives get plenty of use too.

Same-so nice and light. Love these knives! (Victorinox Fibrox) I choose this brand over our expensive knives all the time.

We love our Global knives. They are so fun to use.

I am a Cutco devotee. Love them. Use them constantly. I send them away for sharpening every 18 months or so. They're pricey, but come with a lifetime guarantee. They've definitely preplaced many of my knives when I've sent them for sharpening.
