Need some more lunch options. Some weeks I am on top of things and meal prep on Sunday. Other weeks I need something I can make pretty quickly. |
Tuna/chicken/egg salad in half an avocado or with whole grain crackers.
Greek yogurt or cottage cheese with chopped cucumber, cherry tomatoes, sliced avocado, pickled onion, seasonings Roasted chicken bowl with chicken, brown rice, roasted veggies, harissa |
Chicken breast with your choice of green beans and rice or sweet potato. |
A variation on this:
https://smittenkitchen.com/2022/01/my-favorite-lentil-salad/ Is one of my favorite easy pantry meals. I use jarred salsa, and if I don’t have an avocado I leave it out. Scoop with baked whole grain chips. This takes a little longer but is also easy and very good: https://www.delishknowledge.com/black-bean-and-mango-salsa/ If you have a way to heat things up in the day, lentil soup, either home made or or from a healthier brand like Amy’s is lovely. In the summer, I like to make a home made blender gazpacho in large quantities, and bring some for lunch with a sandwich or cheese and crackers, or a container of chicken or chickpea or tuna salad. |
Are you looking for things to pack or do you work on home? My go to quick lunch from home is scrambled eggs with veggies thrown in (handfuls of spinach, mushrooms, whatever you have on end). Keeps me really full. Or cook up a protein or two (chicken or salmon) on the weekends and add it to a bagged salad with your favorite dressing. |
Ask ChatGPT. It's a great resource. |
Just discovered this use yesterday. I had ChatGPT calculate my ideal macros, and even came up with a weekly meal plan to hit those macros. I don’t love AI for many reasons, but this was a great use! |
