How do you keep your diet well-balanced and make sure you get adequate protein/iron? Also...is it true that eating lots of soy products or tofu is associated with health risks? Thanks!!

Most Americans get too much protein.

Most vegetarians can get plenty of protein without trouble. I've never had a problem in 10 years with protein or iron.

And I don't believe that soy products are harmful to your health. I think a lot of that has been way overblown.

I avoid loading up on soy. I find anything with beans covers both protein and iron. Nuts and nut butters and whole grain breads are also both good twofers for iron and protein.

Include lots of beans & lentils in addition to soy. I do dairy as well, but try not to go overboard on any one thing. I also take vitamin supplements, to make sure iron & calcium are ok. I've been veg for 30 yrs. and have zero health problems - normal weight, low cholesterol, etc.

Most vegetarian cultures eat lots of beans/lentils and rice. I would supplement with tofu, but I wouldn't make it my daily protein snack. Greek yogurt can have about as much protein as a small chicken breast.

OP here...thanks! I haven't really eaten meat in about 3 months so I think I'm really "going vegetarian". I'll really miss my mother's chicken soup (grandmom's recipe) but that's about it.

Another quick question...does vegetable stock substitute for chicken broth for most recipes, or is there a fake chicken stock out there?

Veg broth ... I've never heard of fake chicken broth but who knows.
Browse the vegetarian times website ... They also have a starter kit you can download.

You can use veg stock in any recipe that calls for chicken stock. Yes, there are fake chicken and beef stocks. We just don't use them as my husband feels weird with anything mascarading as meat.
