I went to Gravitas. Nice place, but literally 90% of the staff were non-white and many spoke English as a second language.

I think this guy is going to have a labor problem, not a customer problem.

It is, but there are a lot of visitors, they are the ones restaurants rely on. Tourists from all over (who don't care or know) and suburbanites too who come on the weekends. The crowd that isn't going to drive to Ivy city or even DC downtown.

what are we paying govt employees that they can go to Michelin-star restaurants as regulars? I make 1m/year and go maybe once a year in fact haven't been to one in 3 years.
