Boil water advisory - restaurants open

I work in PG County where there has been a massive water main break and boil water advisory for a couple days.

But lots of restaurants are still open, how are they able to have portable water for cooking cleaning and making food? Are they boiling all of this? Do they have industrial filter filters or are they just kind of pretending it’s fine
