What's a good dairy free meal to take to a family with a new baby? I usually take things like a pan of enchiladas, lasagne or chicken pot pie to friends when they have a baby, but none of those will work here. I'd rather not try to use fake dairy products, either.
I've been in a real cooking rut lately anyway, and just can't think of anything. I'm also 8 months pregnant and have a toddler, so I'd love some simple suggestions. |

Make enchiladas without cheese. I make vegan bean enchiladas. You could still use chicken assuming it is cooked first. Roll up your enchiladas and bake them for about 30 minutes at 350. They'll get a little crispy on top but stay soft on the bottom.
For my vegan bean enchiladas, I take a can of black beans, rinsed and add it to lightly sauteed onions and garlic, cook them together for about 5 minutes and add some cumin. Wrap the beans in a tortilla and line them up in a baking dish. 30 min at 350. You could also make some crock pot dishes like beef stew. Especially if she's very recently given birth, beef can be good for restoring iron levels. Chili, which is also easily made vegetarian. |

Thai yellow curry and rice is my go-to to bring people that have just had a baby. But they have all been my friends who I *know* love my curry. . .It's my mom's (who is Thai) recipe, if you want it

| I'd go with a big pot of soup or stew. It's getting chillier, and soup or stew is easy to reheat in single portions-- easy with a crazy newborn schedule and when mom/dad aren't eating at the same time. |
