Turkey sausage - allspice nutmeg clover

So I try to eat healthier and make my own ground turkeys sausage, with onion and some herbs.

They were alright

But then a recipe suggested these three spice island essentials: nutmeg, allspice, and cloves and it TRANSFORMED them and really made them taste like sausage.

Are they really common in regular sausages? Any explanation on how they make such impact with such tiny amount?

I make my own and it's ridiculous how much black pepper you need. Also don't skip the fennel seed. To me fennel is "the" sausage taste.
