Gluten free main dish for tween's party

Anonymous
One of my kids' guests at her small party is gluten free. Rather than have separate food just for her, I'm looking for an idea for gluten free meal ideas. Basically a main dish and some sides for dinner. Would love your thoughts!

Shouldn't you ask your daughter what she wants to have and then see if you can do a gluten free version of this?

+1 DD doesn't eat gluten and one of her best friends is vegetarian. Our go-to party for is a taco bar -- GF corn tortillas, rice, beans, etc so everyone can make what works for them.

My daughter is the one who asked me to look for ideas for gluten free meals.

What cuisine does she like?
Some suggestions would be:
Enchiladas (made with corn tortillas and check the sauce is GF), beans, rice and the works like salsa, guacamole etc
Indian food with rice as a side in addition to naan
GF lasagne and a big salad
Thai curry & rice

This is for a tween's birthday party, not an adult dinner party, LOL!
