I agree Italy is easy assuming you eat cheese.
England is surprisingly vegetarian friendly both because of the Indian heritage and also because after mad cow a lot of Brits went vegetarian. South America is, I think, tough if you don’t eat fish or shellfish. |

If you are strict Mexico can be tough because beans can be cooked with a bit of meat for flavor. At high end place probably okay but at roadside eatery less certain.
Northern Europe is full of progressive vegetarians. |

The UK has a lot of vegetarian options at restaurants. Especially with the many Indian and Pakistani restaurants. I lived in Scotland for a few years with a vegetarian roommate, and even the pubs had vegetarian options. |
Just traveled to Portugal with a vegetarian and it was fine. Many options. |
The only place I've consistently heard of issues is Western China, from a friend who.lived there. She said there were degrees of meat so someone might understand you don't eat beef or pork but still serve chicken. |
I can’t speak for the whole country because it’s huge. But Cancun, puerto morelos, holbox, Guanajuato and San Miguel de Allende were easy for my veg family. Any area in Mexico with any amount of international tourists has 1-2 veg items on the menu at most restaurants (not in the street or the very cheapest restaurants that have only a few menu items hut any place that has a full menu). |
Mexico responder here. My favorite places to eat have been Greece, Turkey, Thailand, Cambodia. |
