ISO suggestions for sister trip

I'm thinking of taking my sister on a trip for her belated 60th. Would love for a warm, restful spot, but not just a remote beach resort. As much I'd like to take her to S/E Asia, etc, I can't swing that (and she def can't). What might be some possibilities?

Do not have a specific budget, but am thinking business class tickets, great resort (but not an Aman-type). Would like to hang at pool, beach, but also see some sites, take a cooking class, etc.

I like it a lot as long it’s not too hot. Also you don’t need that long there but you could combine it with a visit to a beach resort.

Are you aware if there are better times of the year to visit than others? Love any suggestions you may have!

I never considered it before, but a friend just sold me on Mexico City for our next girls weekend. The luxury hotels are relatively cheap and we're excited for the food scene and museums. A bet a pool and cooking class wouldn't be hard to find there
