| Any cookie cutter shape will work. We do dinosaurs and other fun shapes. We use cinnamon imperials for eyes and other features. |
| You could use it as a short crust pie/tart base. Roll it and bake in a pie pan, then fill with a no-bake cheesecake or pudding type filling, maybe something with an eggnog flavor. |
| You could roll out and bake as a giant cookie, break up and serve over ice cream or pudding. Cookies could form the base of an ice-box cake. Gingerbread house! Bake in lined muffin tins for little tartlets or single serve ice cream/pudding cups. |

I had extra that I rolled into balls, stamped with a cookie stamper to make flat circles with a pattern, then dipped the cooked cookies in a powdered sugar glaze. Yummy.
You could also cook them as circles and make ice cream sandwiches with vanilla or toffee ice cream. Or crumble them into a trifle. |
| I'd roll into logs and then freeze to pull out to bake on a snow day or company coming day. You can roll the logs in sugar (plain or flavored) and then slice into circles. |
