Update: goose was great!

We had beef Wellington, and I made sure to do a huge one so that we can have a second meal of it today. It's the highlight of my Christmas, honestly.

They were pretty aggressive towards me in Canada, I'll say that. Due to that and them being everywhere, I can't quite imagine eating one.
But, I am glad it was tasty.

Canada geese are wild game, so i'd imagine pretty toothsome if it's even legal to eat. Ours was a freerange domestic goose who only had one bad day in its life as they say
