Low effort vegan brunch ideas?

Going to host a low effort Christmas Day brunch essentially with just my parents and in-laws and nuclear family. My mom recently became vegan. Looking for recommendations/inspiration for what we can serve her. We’ll have other mostly non vegan stuff as well. I usually don’t have a problem doing vegan things for her for dinners, but struggling w ideas for an easy brunch.

I did a search and this looked really good. It's roasted vegetables including potatoes with a hummus on the side. Looks yummy.

Avocado toast is probably your best option. Get some fresh sprigs for the garnish.

i agree with other people about avocado toast being your best bet, and yogurt parfaits with no milk milks, I particularly like the soy good soy yoghurt and coconut milk yogurts best.

Siggis coconut milk vanilla yogurt is delicious - not too sweet and great texture - serve with fruit and granola and avocado toast as others suggested would be delish

Tofu scramble and roasted potatoes. Even my MIL who proclaimed to hate tofu enjoyed it.

I’d ask her what she’s found she likes for breakfast. I am lactose intolerant tolerant so end up eating a lot of vegan foods. I personally really dislike the vegan yogurts I’ve tried. I find many of them have a bad after taste. Avacado toast and/or granola with oatmilk would be my go to’s.

A warm berry bake with oatmeal, vanilla and honey (if she eats that) crust. So easy and so good. With vegan waffles and syrup. Mmmmmm. And I’m not even vegan.
