Best sweet potato casserole recipe

I've included 2 recipes below: the first is sweet potatoes with apples that we now make every year. It is good with ham, pork roast or turkey. The second is our family recipe that my mom made for years. We prefer the first now. No marshmallows in either.

Sweet potatoes with apples
4 sweet potatoes
3 granny smith or yellow delicious apples
4 Tbl butter
¼ cup fresh lemon juice (about 2 lemons)
¼ cup brown sugar
¼ teaspoon cinnamon
Dash of allspice
1/3 cup sherry

Boil sweet potatoes with skin on for 30-35 minutes until just tender. (You can do this step up to a day ahead). If hot, rinse in cold water then peel. Slice lengthwise into 6ths, then crosswise into ½ inch pieces.

Peel and slice apples into 6ths lengthwise, then ½ inch pieces (you want them the same size as the sweet potatoes).

Cook apples over medium high heat in large skillet or dutch oven in 4 Tbl. butter. Cook for 3 minutes until a little softened. Add lemon juice, brown sugar, cinnamon, allspice, sherry. Bring to a boil and simmer 3 minutes. Add sweet potatoes and stir gently so they don’t break up. Serve hot.

Sweet potato casserole
5 medium sweet potatoes, boiled, peeled and cut up
1/3 cup sugar
½ tsp cinnamon
½ tsp nutmeg
2 eggs, beaten
¾ stick butter, melted
Chopped pecans and brown sugar mixed to sprinkle on top.

Mix all ingredients well. Place in a 1 ½ quart casserole and top with pecans/brown sugar. Bake uncovered for 20 minutes in 400 degree oven.

My family, actually not big on sweet dishes, raved about this easy version with mini marshmallows (NOTE: I only used 1/4 of a bag of marshmallows. Seemed plenty sweet to us.):
