Non-resort warm winter destination

Looking to identify a destination to celebrate husband turning 40 in Feb, preferably somewhere quasi-warm. Considering various Caribbean destinations but we aren't really "resort" people - we like to explore cities, local history/culture, music. Ideas?

Not Caribbean, I find non resort locales more laidback and remote, and that doesn’t seem to be what you’re looking for.

Costa rica? It's as adventurous or relaxing as you want it to be. Or for closer, maybe san miguel de allende in mexico. Not really a resort destination but lots of history and food and things to do.

OP stated she want to explores cities, historical places and music. Costa Rica doesn't fit the bill for any of those.
