Help my parents plan a trip to AZ or NM

Anyone have a recommendation for my parents? They want to go to NM or AZ or maybe CA on vacation and stay somewhere luxurious and outdoorsy and gorgeous where they can ride horses and hike. Any suggestions? They never go on vacation, and I'm trying to find them somewhere really special.

Any suggestions for particular hotels, resorts or even regions or towns? They'll be traveling in late March/early April and will be flying from NYC, if that matters.

You may want to try around the Grand Canyon - there are a few hotels up in that area. One very close to the big trailhead (Bright Angell Trail,?). It has individual cabins that were fabulous. The Phoenician (Phoenix) is really nice - not sure about activities there though - known for spa and golf.
