A midpoint between Rocking Horse Ranch/Woodloch and YMCA Camp/Yogi Bear

Basically, the title. Has anyone found if there is something in between the rocking horse ranch type resorts (wonderful for little kids, with pools, waterslides, boating, fishing, ponies, gourmet food, and so on, but $1000+ per night in summer) and the YMCA type resorts (also wonderful for the kids, loved the activities, and only $200 per night for the whole family, but quite rustic food). I enjoyed both so much for mostly the same reasons and would love a financial midpoint.

I would love to spend 400-700 per night and get an in between. So … I do not require being waited on and multiple courses like RHR (a basic hamburger and salad and water is good!) but it was also hard to eat the YMCA camp food for multiple days. And the activities and so on …

I know some people love Tyler Family resort in VT, or we enjoyed Smugglers Notch.
