What to cook for an Elderly Neighbor?

We don’t know their tastes. The elderly eat what “we” eat.

My inlaws like food that is soft, not to spicy and easy to eat and re-heat. Here's some things I make them - baked ziti, chicken and rice/noodle soup, meatloaf and mashed potatoes, chili and cornbread, homemade mac and cheese, stuffed peppers

Rice and noodles are a no with diabetes.

Meatloaf made with oatmeal served with roasted cauliflower

Given they are diabetic I would definitely ask them. My FIL is diabetic and carefully plans out his meals, workouts, and insulin. His dinners tend to be more carb heavy.

Why are you cooking for them? Why not have them over. You either care enough about them to socialize, or you don't.

There's a YouTube channel called Dollar Tree Dinners that had a whole recent series on cooking for an elderly neighbor with dietary restrictions.
