How do I make a baked sweet potato into a lunch?

I baked several sweet potatoes over the weekend and I’m looking for lunch ideas. What can I top them with that I can microwave for a satisfying lunch? I prefer savory over sweet. No beans, please, I cannot eat them at work.

I eat a sweet potato usually once a week for lunch. My favorite is when we have leftover taco meat and I do that plus a sprinkle of cheese, some salsa, some crushed tortilla chips, and maybe leftover roasted veggies or guac or jalapenos or other stuff I have around.

We usually do black beans or chili with cheese, sour cream, etc. Maybe you could do a no-bean chili? Or pulled pork or chicken?

I’m OP and planing to eat half of one with savory toppings. I like the ideas so far. What I’ll need to do is plan some dinners that will have appropriate leftovers for the toppings

Greek yogurt on top. Salt and pepper.
