Got some buckwheat flour from a friend who is decarb-ing her pantry in hopes of losting 10 pounds by thanksgiving. what can I make with this?

I have the same problem. Even buckwheat pancakes (galettes) only use part buckwheat and part flour. But nothing beats one, nice and thin, with some good ham and gruyere.
