What would you make some someone who tells you that they eat gas station pizza and wings for dinner...regularly?

Or
Invite them to make homemade pizza with you, from making the dough to piling on healthy toppings

okay I've only recently realized this is a thing. I saw signs about wings and a 20 piece shrimp bucket! How does this work? Are they manning fryolators in there? I never go in but I might need to investigate.

I don’t understand your question. You are making food for them? Or asking what to think about them?
If you’re making food then just ask their preferences or say what you are making and ask if that’s ok.
If it’s the matter, myob.
My spouse loves Royal Farms chicken. It is what it is. I don’t judge .

Yes? A lot of gas stations have take out sandwich situations.

A lot more gas stations sell actual meals now. Mostly things like Mexican, Indian, etc.

It can be quite healthy and nutritious if you pick the right ones. They use more simple ingredients.

I have family members that own a convenience store. People stop specifically for their breakfast sandwiches. They are prepared in the store..so all convenience stores are not alike.

Mom-and-pop gas stations with a serious home cook behind the counter > dull but reliable chains with a sandwich menu, like WaWa >>>>> those hot dogs on a roller at 7-11.

gas stations serving to truck drivers, many more drivers are of a non-euro background these days.

Anything? To me, that means they are not picky.

I would worry much less about cooking dinner for someone like this versus someone who reports lots of restrictions or preferences.
