Eating Low Carb to Avoid Metaformin Bathroom Run

So I am new to the world of diabetes, having just jumped to 6.5 a1c much to my doctors surprise.

Here's what I ate today, and I still feel like my carbs are too high:

Breakfast:
Sauteed ground turkey with onions and pepper (1/4 lb)
Sour cream (1tbs)

Morning Snack:
Honey roasted peanuts (we ran out of regular): 2 oz

Lunch:
Scrambled Eggs
1.5 oz cheese
1 Date with almond butter on top

Afternoon Snack:
Baby carrots (3oz)
Grape tomatos (2 oz)
Yogurt (3/4 cub)
Raspberry Fruit Spread (1 tbsp)

At this point heres my nutrients:
Carbs: 116g
Fat: 79g
Protein: 66g


Dinner will be tabouleh with sauteed salmon

I tried to keep my daily carbs below 100. The Fruit spread was because my kid had leftovers -- i would have had my yogurt plain. I plan to drop honey roasted peanuts. Is the one date okay; its such a pleasant indulgence that curbs so many cravings for sweet. I've read its high in fiber and okay for diabetics, but I'm wary because with almond butter it is heaven.

Will this level of carbs make me suffer under metformin?
