We’re driving to Kiawah next weekend (driving part way Fri night and rest Sat morning to arrive around 1pm). Family of 4 including 2 hungry teens.
I’d appreciate suggestions for what to cook for dinner the first night, before we’ve done a big grocery trip. My goal is an easy and not-too-junky meal (I prefer to cook seasonal and sort of healthy on vacation - before I am lambasted, we’ll be eating plenty of ice cream with a couple of greal meals in Charleston, too). I could pack some items from home in a cooler (our halfway stop is at my sister’s house so could move into fridge there) or am willing to do a quick grocery shop that afternoon. Thanks for your ideas. |

Cooking while on vacation is that last thing I want to do.
Can you go out to eat? Maybe a local sandwich shop if you want to keep it simple. |
| I always marinate some meat ahead of time to grill when we get there. Cut up some veggies and toss with olive oil and spices in a separate bag or container. Throw it all on the grill. |
| Just have some backup sandwich stuff and snacks. You never know what's going to happen (delays, you'll be tired) and if you're committed to not eating out, have something ultra simple like sandwiches and fruit. |
| We always do some kind of pasta. Sometimes Mac and cheese (from a box, but my kids love it) or spaghetti. I throw some veggies in the cooler and pop into the little market at our beach to grab milk or some ground turkey to make a bolognese. |

| You’re on vacation! Stop by Blackbird Market on the way in and get meals to go. Love that place! It’s right there where Maybank crosses Main, across from McDonalds. |
| I always bring the ingredients for lasagna and a foil lasagna pan. I make the meat sauce ahead of time, freeze it, and have in my cooler. Use the no bake noodles and it bakes while we unpack and DH runs to the store. |
| I would do the grocery stop on your way into town so you are all set up. |
| Pasta puttanesca from the silver palate. Bottle of red wine. Garlic bread. Big salad. Bring ingredients with you in car. Should be size of one grocery bag. |
| We have a tradition of having spaghetti and meatballs the evening after we move into the beach house. Make sauce and. Meatballs in advance. You can even freeze it and let it thaw on the drive down. Slice up, butter and garlic a couple loaves of Italian bread and wrap In aluminum foil. Take 2-3 boxes of spaghetti (I recommend angel hair because it cooks so quickly) and when you get to the house, all you need to do is boil the pasta, heat the sauce, and bake the bread. |
| Where do you think you’re gonna be eating a ton of ice cream in Kiawah? The weird thing about the Charleston beach areas that there’s not a lot of beach ice cream shops! On kiawah there’s only one at the sanctuary. |

I would pick up a meal at periwinkle on your way in. Tons of healthy options and they make family sized meals to go.
Not sure why you need to break the trip up. We always drive straight through but since you’re going to have time on your hands in the morning, you could always pre-order groceries at Whole Foods in Cool Charleston so then you don’t have to worry about this. |
| We are at the beach now - we got pizza the first night and are cooking a few simple things (pasta, tacos) other nights. Restaurant food for every meal doesn’t agree with everyone, and we also have sandwich things and fruit. |
