Homemade veggie burgers

What's your favorite easy recipe for veggie burgers? I'm trying to watch my saturated fat and stay away from frozen ones. But some of the VB recipes are a lot of work. Which are easy?

What type of burger are you looking for eg. Tofu based, bean based, nut based? Any food considerations or allergies?

Probably bean but honestly, whatever is easiest and has low saturated fat. Also, I need my omnivore husband to like it. He can't have walnuts.

The Mark Bittman recipe is very simple and customizable. I prefer baking them in the oven to pan-frying them. You do need a food processor.

1 onion
1 can beans (or 2 c cooked beans)
1/2 c rolled oats (or mashed potato/sweet potato)
1 egg
whatever spices you want

pulse everything in the food processor. If it doesn't hold together, add another egg or something liquidy (from the bean can or something else--I like ketchup or mustard). If it's too wet, add some more oats. I also will sometimes add a drier vegetable like shredded carrot, kale, or mushrooms.

Form into 8 patties, let rest in the fridge for an hour, then pan-fry about 5 minutes each side or bake on an oven sheet (350 for 30 minutes, flipping halfway).

How low does it need to be? The boca burgers I eat have 1.5 g saturated fat.

Oh interesting, that is low. I thought it was a frozen food thing that made it higher, even though it's not terrible at 6g. Homemade is always better though, right?

Easiest is the one that can be made from common ingredients found at hotel breakfast buffet (except can of beans). I’ve made these many times when unable to find vegan options and on the road or not at home :

Can of beans
Instant or quick oats
Ketchup
Mustard

Mash, shape, cook

This is the recipe we like but it is some work. I may try the simpler recipes above to see if DH would still be happy.

Can egg whites be substituted for the whole eggs? Or does that affect the binding?

Hey OP if you are trying easy and want to make a huge batch and freeze, the above recipes look good. If you want easy but don't care about frozen patties (are you gonna put them on a bun?) then I suggest just cooking up a batch of beans and grains (in broth, with onion, seasoning, etc.) and making bowls.
