| So I bought a block of cheddar at the store yesterday, came home and unpacked the groceries, and the cheese had almost completely warmed up from the temp inside the hot car. After refrigerating, it feels like the right texture but I’m wondering if there would be any quality or food safety issues eating it? It was warm and kinda squishy inside the package by the time I got home. |

I think cheddar cheese would be fine. I might worry about a soft cheese like ricotta. But still it's probably less than two hours, right?
Think about melting cheddar in Mac and cheese or a quesadilla or on a pizza. If those good were cooked and then refrigerated, the leftovers would be fine. |
