ice cream always gets rock hard

Any tips to preventing ice cream from getting rock hard in the freezer? Is it the brand I'm buying (usually turkey hill or whole foods house brand)? I think our freezer is at the right temp. I know not to let it get melty because they it refreezes super hard. Any ideas?

As a former ice cream professional (I worked at HD in high school), I suggest keeping your ice cream towards the front of the freezer or on the door if there is one. My guess is you're keeping it all the way at the back/bottom. Also, if you dip your ice cream scoop in a glass (mug, whatever) of hot water, that'll help it scoop ice cream that's hard.

I stick the whole container of ice cream in the microwave, then nuke it for 15 seconds. Scoop out however much I want, put container back in freezer.

Try a different brand, and/or letting the carton sit on the counter for 5 minutes or so before scooping.

Once you’ve opened it, keep the ice cream carton in a large ziploc bag. It is a game changer! I think I read it in a food magazine once.
