Need help with this dessert

I want to make a layered mango and coconut custard or pudding for DS for his birthday. I can’t use gelatin (vegetarian), but I would like it to contain egg for the creaminess. I’m not finding any recipes on line that look good, not even separate ones for a mango or a coconut custard. Anyone happen to have recipes for either or both of these? Or ideas? Ideally I’d use canned mango puree, good fresh mangos are too much of a gamble and I find the frozen chunks to be too fibrous.

Help me make this special birthday dessert!

Make mango curd! It would be nice and thick without gelatin.

How do you make panna cotta without gelatin?

I’d probably try a coconut custard cream - like creme anglaise, but made with coconut cream and with whipped cream to lighten it. Layer with mango curd.

OP here. There are lots of recipes with either agar agar or cornstarch. Will report back!

OP here with a follow up. The flavor profile was out of this world. So good. The consistency of the panna cotta needs some tweaking, it didn't really set. I used powdered agar agar per the recipe I used, but I knew I should have added some cornstarch too. I'll make it again sometime with that modification. DS loved it!
