Road Trip and Picnic Foods

Two adults and two elementary kids are going on a long road trip to nature destinations. I am looking for suggestions for vegetarian foods that we can easily take on our road trip and foods that are easy to pack for picnic lunches at our nature destinations.

My oldest hates sandwiches/wraps and hates all nut butters.

Will you have a cooler with you? Do you need picnic lunches that can be out of the cooler all morning, or just portable things?

I always like fruit and bread and cheese when I'm out wandering. Will the one who doesn't eat sandwiches eat cheese and crackers?

Pasta salad as PP suggested--and other vinegar based salads, e.g. cucumber salad, bean salad, etc.

Hummus and veggies or pita chips or pretzels (at least for the road trip part).

Nuts/Trailmix.

I’d plan on vegetarian “charcuterie” for your picnics - baguette, crackers, cheeses, nuts, jam, dried fruits, roasted chickpeas, sesame
sticks, precut veggies like carrots, cucumbers, peppers, if you have a cooler also yogurts.

For the car trip I’d make hummus sandwiches or wraps, and the kid who doesn’t like sandwiches can have a hummus/pita chip snack pack from TJs with cheese stick, gogurt, grapes/apple

OP here. Yes, I think that snack foods might be best. I like the idea of vinegar dressed hearty salads as well. We can bring a cooler in the car but might have some meals during hikes.

My oldest just hates having repeats and with the no sandwiches it makes it really hard to figure out what to make.

He eats regular nuts, just hates the texture of nut butters.

Bean/lentil salads transport and keep well as a higher protein option (relative to pasta salad).

Full-fat "fancy" yogurts have also been a hit - noosa or a skyr.

Hummus wraps don't travel super well but are easy to assemble for a picnic.

Bagel and cream cheese.

Baked egg cups ( vegetable and cheese), homemade spinach pies, batch of homemade hummus with various items for dipping, homemade pizza or cheese bread, lots of fruits, it’s, cut vegetables

Farro salad with lemon/olive oils dressing would hold up well.
