I’m hosting simple brunch for a crowd.
Planning on French toast, fruit, pulled pork sliders & chips.

Want to add an egg dish - your favorite breakfast casserole that kids will like (ie no cottage)?

Just do regulator scrambled egg. Pulled pork is an odd choice.

I like egg dishes that don't have a bunch of bread/carbs in them to balance out the usual carb suspects at breakfast (though I also love french toast, so there's that).

Why pulled pork in the morning? Wouldn't bacon make more sense?

Instead of French toast, you can do overnight baked French toast. So much less work. Pulled pork is an odd brunch choice.

Customize with any meat or leave it out. Use any veggies or any kind of cheese.

I’ve doubled recipe also and used a larger dish.

I think pulled pork kind of clashes with french toast. Is there a reason you can't do bacon or sausage? Easy to cook a lot of bacon on a rack in the oven. My kids also love chicken sausages.
