Summer Dessert Ideas?

Looking for some easy good summer dessert recipes. Have 4 BBQ's in a row the next few days and am making a dessert for each. Would love any ideas for good and easy summer desert recipes. Kid friendly a plus. Thanks!

Strawberry shortcake or a big bowl of mixed berries and another with Greek yogurt or whole milk ricotta mixed with a little honey and vanilla.

Shortcake has to be assembled, great at home but hard to transport to a pot luck.

The Post recently had an article about making sorbet using ziplocs bags and ice water. We tried it and it was a crowd pleaser- fun and delicious.

blueberries in maple cream.

soak blueberries in maple syrup for a few hours or overnight. Whip heavy cream. Fold together. Sinfully delicious.

Rice crispy treats! Not at all gourmet, but always a crowd pleaser. For variety try chocolate rice crispies and melt a bit of Hershey's chocolate into the marshmallows.

I agree-- rice crispie treats or even brownies are always popular, and the fact that they are easy to make shouldn't count against them!

I have made the Hershey Chocolate Peanut Butter Pie several times this summer.
