Fun ways to make Quesadilla?

Tonight is taco night but I usually make myself a quesadilla. I use onion and eat with salsa or BBQ sauce. Any other creative ways to make quesadillas? I'm a vegetarian.

Sautéed onions, spinach and feta

Cheese, poblano pepper, corn

- butternut squash, carmelized onion, cheese; serve with adobo and sour cream sauce
- roasted poblano, black beans, cilantro
- Greek/mediterranean - feta, shredded cheese to melt, hummus, tzatziki, cucumber, etc.

Charred cauliflower, roasted squash, grilled zucchini all make nice additions to a quesadilla

Refried beans, green salsa, roasted corn, mushrooms (these are random suggestions, not all meant to be eaten together)

Sweet potatoes and black beans are great together. Make a little lime crema.

Not really a quesadilla (no cheese) but an old babysitter got us making them with peanut butter, banana and berries. Yum!

What do you look like as a quesadilla?

Why not just make one for yourself? Seems easier.
