I don't know if this has been covered before (I searched and only found a thread on canned tomatoes).
Can anyone direct me to the thread or provide any scientific knowledge/studies of the nutritional value of canned vs. fresh vs. frozen veggies? |

I think the issue is that over time, veggies/fruit can lose nutrients. It used to be that fresh was best; flash-freezing has changed all that, and some flash-frozen veggies were frozen at a point when they were "younger" and had all their nutrients, where the fresh produce has spent several days being shipped and lost some of its nutritional value. I think canned veggies have good nutrient content because they're canned at their freshest, but you generally need to rinse them well because there's usually sodium in the water in which they're packed. (unless they're labled low sodium.)

Frozen is equal to or almost equal to fresh from a nutritional standpoint. For taste and texture, some frozen works better than others. I'm not wild about frozen asparagus spears.
Same for fruit by the way. Forget canned. I'll post a link in a minute. |

Agree with all PP. Most frozen vegetables have similar/better nutritional value compared with fresh. Side issues that make me usually go frozen:
-BPA in canned products (SO scary!) -organic so much cheaper and more accessible in regular-folks stores if frozen vegs -microwaveability |

ditto this. we do fresh stuff we plan to use each week but also keep a stock of frozen fruit and veg to have on hand for DD. We do buy some canned stuff but it's mostly peaches and pears (both in pear juice, not "syrup") or beans (stuff that's not as easy to find in frozen and handier in canned versions). |
